I think the reason Undertale is great is because Toby Fox came up with a game that consists of nothing he couldn't do really well or get help with. He bit off exactly what he can chew.
I've seen many indie games that insist on having as many back-of-the-box features as possible, like voice acting and fully animated cutscenes, but because they couldn't do it well it ends up hurting the game.
