@teachrobotslove Maybe you can help me then. I make Mozzarella cheese. When I get to the part of curing it in scalding water to make it to it's final stage of stringy and stretchy, it just breaks up on me. What am I doing wrong?

@SaltyBoomer777 Mozzarella is really tough to make. There is a "mozarella" recipe floating around but it is more like a farmer's cheese and the texture won't be the same... are you using vinegar/yogurt or a rennet and culture? PH level is too variable in vinegar so sometimes it just plain doesnt
