A deceptively light, but deeply chocolate-rich slab of Chocolate Negus inspired by Nico Ladenis (sadly I never got to try his marquise) @Rest_Renaissant, which was almost overshadowed by a nectarean floral, honeyed quince poached with saffron, and salted honey ice cream.

Raviolo of Kennet crayfish, sauce Nantua @Rest_Renaissant. Delicate pasta work enclosing a pert crayfish tail reclining on fluffy salmon, scallop & crayfish mousse. The crayfish sauce told vivid tales of copious shells coaxed out of their intrinsic flavour, lots of butter, & time
