There’s a routine to what we do, but every day in the kitchen brings something new! What keeps us moving like clockwork is the teamwork and trust we’ve built. It might look a little wild from the outside, but there’s a solid system behind every sizzling moment!

But for dessert, a classic is a classic. Our date pudding is a crowd favourite (people notice it when it’s missing!). We make 200 litres a day and it’s unique to the UAE because of our local dates and their taste and texture is one you won’t find anywhere else in the world.

And that means we also have a chance to experiment with cuisines and new dishes. We’ve recently welcomed a chef specialising in Tajik cuisine, and another for a North Pakistani menu!

What I love about big kitchens like ours is that we cater to so many different cuisines, so many different palates. For every event, we have folders and folders of menus that the clients or event teams can pick from.

We have approximately 155 chefs in Dubai and that team is always growing. Here’s a fun fact, our senior chefs are assigned a niche for every event—for instance, one chef will be entirely allocated to garnish!
